Garlic Products

Garlic (Allium sativum) is native to Central Asia and northeastern Iran. Garlic has a history of several thousand years of human consumption and use.

It was known to ancient Egyptians and has been used both as a food flavoring and as a traditional medicine. China is the largest producer world-wide while India and Egypt are other important producers.

In Vietnam, garlic is cultivated in almost provinces.

Garlic is easy to grow and can be grown year-round in mild climates. Nearly all of the garlic in cultivation is propagated asexually by planting individual cloves in the ground. In colder climates such as in the North of Vietnam, cloves are planted in the autumn, about six weeks before winter starts and harvested in late spring or early summer. The cloves must be planted deep enough to prevent freeze/thaw, which can cause mold or white rot.

Garlic plants can be grown closely together, leaving enough space for the bulbs to mature,  Garlic does well in loose, dry, well-drained soils in sunny locations.

The garlic plant’s bulb is the most commonly used part of the plant. Garlic bulbs are normally divided into numerous fleshy sections called cloves. Garlic cloves are used for consumption (raw or cooked) or for medicinal purposes. They have a characteristic pungent, spicy flavor that mellows and sweetens considerably with cooking. Garlic is widely used around the world for its pungent flavor as a seasoning or condiment.

Tuong ot toi Viet Nam (Vietnam chili garlic sauce) is a highly popular condiment and dip across North America and Asia.

 

There are different varieties or subspecies of garlic, most notably hardneck garlic and softneck garlic. Hardneck garlic is generally grown in cooler climates and produces relatively large cloves. Jointly with the farmers, we chose this variety to cultivate in Hoa An and Ha Quang  (Cao Bang). Garlic has shown to grow there with very good results. Not only was the cultivation successful but also the garlic proved to be of high quality with a subtle and intense taste.
